On September 10, The Shilla Seoul Hotel announced that it will host a gala dinner featuring Chef Masashi Kimura from "Kiyoda," a sushi restaurant located in Ginza, Tokyo, alongside his disciple, Chef Yoshihiro Suzuki of "Aria Kye." Kiyoda Sushi is renowned for its authentic Edomae sushi, a style that originated and developed in Tokyo. The restaurant is an intimate space with only eight seats, and reservations are fully booked six months in advance. Kiyoda Sushi is considered a pioneer in introducing the "omakase" concept, which means "leaving it up to the chef." The restaurant has maintained its reputation by passing it down to the best craftsman of each generation, and Masashi Kimura is the third-generation master chef.
Chef Yoshihiro Suzuki of Aria Kye, the Japanese restaurant at The Shilla Seoul Hotel, began his culinary career at Kiyoda Sushi. He has a deep understanding of authentic Edomae sushi and Japanese ingredients, having spent many years working alongside Chef Masashi Kimura and inheriting his expertise and philosophy.
The gala dinner will be held on September 13 and 14. It will feature a special menu curated by Kiyoda Sushi, using seasonal ingredients sourced on the day of the event. Guests will also be able to enjoy a beverage pairing menu designed by Chef Masashi Kimura, reflecting the latest omakase pairing trends in Tokyo.
Meanwhile, at Aria Kye, Chef Yoshihiro Suzuki, along with Chefs Moon Seongo and Um Jongheon, continues to present authentic Edomae sushi, having all trained under Chef Masashi Kimura.
