Judges Praise "Ginseng Samgyetang·Ginseng Croquette"
for Blending Tradition and Innovation at the 2025 Geumsan National Ginseng Food Competition
'Ginseng Samgyetang·Ginseng Croquette', a dish that harmonizes tradition and modernity, won the grand prize at the 2025 Geumsan National Ginseng Food Competition finals.
At the finals held on August 9 at the Geumsan Ginseng Herbal Health Center in Geumsan-eup, the team of Cho Dongjin and Cho Jungmin was awarded the grand prize for their entry, 'Ginseng Samgyetang·Ginseng Croquette'.
Twelve teams that passed the preliminary round advanced to the finals, where they presented a variety of ginseng dishes and competed in creativity, utilization of ginseng, taste, and overall quality.
The award-winning dishes from this competition will be showcased and sampled by visitors at the Geumsan K-Ginseng Food Show, which will be held at the 43rd Geumsan World Ginseng Festival on September 21.
Park Insu, head judge and professor of Culinary Arts and Baking at Daejeon Institute of Science and Technology, commented, "The Ginseng Samgyetang preserved tradition while delivering a deep and rich flavor, and the Ginseng Croquette was innovative and well-executed enough to appeal even to children."
Cho Dongjin, one of the winners, stated, "I participated with the hope of promoting the excellence of Korean ginseng through cooking to many people," adding, "This achievement is even more meaningful because it was the result of teamwork with Cho Jungmin."
Park Beomin, Mayor of Geumsan County, said, "I hope this competition will help widely publicize the diverse and practical uses of ginseng," and added, "We will continue to support the development of creative food content utilizing ginseng in the future."
