Nongshim's Three Baehongdong Products:
A Unique Bibim Sauce Made from Pear, Red Chili Pepper, and Dongchimi
Bibim-myeon has evolved from a seasonal dish that cools down the summer heat into an everyday delicacy enjoyed by consumers all year round.
Nongshim’s third product under the Baehongdong brand, 'Baehongdong Kalbibim-myeon,' features Baehongdong’s unique spicy and tangy sauce paired with kalguksu-style noodles. Baehongdong Kalbibim-myeon uses air-dried noodles instead of fried ones, achieving the chewy and springy texture characteristic of dense dried noodles. The noodles are shaped in a diamond-shaped 'dosak-myeon' form, allowing for a texture that is both thick and thin simultaneously.
Additionally, the bibim sauce includes minced kimchi, and the product is completed with special fried toppings that replicate kimchi jeon and black sesame seeds. Nongshim’s 'Baehongdong Jjoljjol-myeon' is a product that recreates the taste of jjolmyeon using Baehongdong bibim sauce.
Nongshim Baehongdong is characterized by a distinctive bibim sauce made by blending and fermenting pear, red chili pepper, and dongchimi (radish water kimchi). The red chili pepper provides a clean spiciness, while the pear and onion add sweetness, and the dongchimi contributes a refreshing and tangy flavor. The product name is derived from the first letters of the three main ingredients: Bae (pear), Honggochu (red chili pepper), and Dongchimi.
When preparing to launch Baehongdong, Nongshim’s marketers and researchers visited bibim-guksu specialty restaurants nationwide to experience various regional styles of bibim-guksu. They met with Korean cuisine and noodle chefs to discover the secret to bibim-myeon that appeals to all ages and genders. The conclusion they reached was that 'the essence of bibim-guksu lies in the bibim sauce.' Furthermore, through market research, Nongshim determined that consumers’ key purchasing point for bibim-myeon is a 'delicious bibim sauce,' leading to the development of a 'deliciously spicy' bibim sauce.
A Nongshim representative stated, "Since the launch of Baehongdong in 2021, the taste and quality made with good raw materials have been loved by consumers," adding, "This year as well, we will widely promote the charms of the Baehongdong bibim-myeon trio?Baehongdong Bibim-myeon, Baehongdong Jjoljjol-myeon, and Baehongdong Kalbibim-myeon?each with its own unique noodle texture, as we strive to become the number one brand in the bibim-myeon market."
