[Asia Economy Reporter Eunmo Koo] Pernod Ricard Korea announced on the 11th that it will officially launch the craft bourbon whiskey brand ‘Rabbit Hole’ in Korea. Rabbit Hole is a brand created to pay tribute to the distillers of Louisville, Kentucky, USA, who crafted their own unique distilled spirits before the Prohibition era in the United States.
The product introduced to domestic consumers for the first time is ‘Rabbit Hole Cavehill.’ This product is Rabbit Hole’s signature whiskey, made with a special blend of four grains: corn, malted wheat, malted barley, and uniquely, malted barley soaked in honey, which is the only bourbon whiskey currently sold on the market to include this ingredient. It has a reddish amber color and features a subtle spiciness of spices, the sweetness of honey, and the fresh aroma of apples. Additionally, the soft flavors of vanilla and custard cream follow the citrus notes, leaving a full taste in the mouth.
Rabbit Hole is aged in oak barrels slowly roasted at low temperatures for about 20-30 minutes, resulting in an impressively complex flavor. Also, since the proof of the raw spirit is lowered as much as possible before the aging process, the astringent and bitter elements from the oak barrels are minimized. While typical bourbon whiskey products may use the contents of hundreds of oak barrels in a single production batch, Rabbit Hole is produced in limited quantities, using no more than 15 oak barrels per batch, boasting strict quality control and high rarity value.
