Achieving Soft and Chewy Texture of Meat Jerky Using Plant-Based Ingredients
Domestic alternative meat brand Unlimit announced on the 26th that it has launched two types of ‘Unlimit Plant-Based Protein Jerky’ (Cheese Flavor, Mexican Hot).
The newly released plant-based jerky comes in two varieties: Cheese Flavor and Mexican Hot. It is made by blending plant-based ingredients such as soy protein, wheat, and beet to replicate the soft and chewy texture of real meat jerky.
According to the company, the plant-based jerky ‘Cheese Flavor’ is seasoned with plant-based cheddar cheese to add a savory cheese flavor, while ‘Mexican Hot’ features the exotic spiciness of the Mexican habanero pepper.
A company representative explained, “Each serving of jerky (40g) contains 12g of protein and does not include cholesterol or trans fats. No artificial coloring or curing agents are used; the color is derived solely from plant-based ingredients such as beet.”
The existing lineup of plant-based jerky flavors, Galbi and Lamb Skewer, have sold out several times on the company’s website since their release. The company analyzes that this reflects the growing demand for plant-based alternative foods and strong consumer response from those seeking healthy products. Additionally, the high protein content and low fat make these products a great choice for those on diets or who exercise, which is considered another major advantage.
The two new jerky products were first introduced at the ‘Korea Vegan Fair 2022’ held at COEX in early July. Visitors who tasted the jerky commented, “I can hardly tell the difference from real meat,” and “It’s softer and easier to eat than regular jerky,” expressing high expectations for the new jerky launch. In particular, the ‘Mexican Hot’ product’s name was chosen through a public naming contest and voting among customers who sampled it at the fair, making it even more meaningful, the company said.
An Unlimit representative stated, “We are very pleased to launch a new flavor of plant-based jerky that many people have been looking forward to,” and added, “We plan to continue experimenting with various seasonings to meet the diverse needs of our customers.”
