Easy and Delicious
On a drizzly day like today, let's spend time at home enjoying delicious food. Rather than dishes that require long cooking times over a fire, it's better to choose something simple to make. When it comes to "summer dishes that are cool and tasty without using fire," the first thing that comes to mind is cold ramen. As the name suggests, cold ramen is ramen served chilled, offering a different charm from the hot, steaming ramen. There are methods that use water for cooking, and methods that use naengmyeon broth; today, I would like to introduce two cold ramen recipes using naengmyeon broth.
Anseongtangmyeon Cold Ramen
Ingredients
Ramen, naengmyeon broth, ice, half a spoon of sesame oil, half a spoon of vinegar, half a spoon of sugar, boiled egg, radish sprouts
Instructions
① Boil the noodles thoroughly and rinse them in cold water.
② Dissolve half of the ramen soup base in half a cup of warm water, then mix it with cold naengmyeon broth.
③ Add sesame oil, vinegar, and sugar, then mix well.
④ Add ice and toppings.
The spicy and tangy broth is exquisite. Without making a separate broth and using only naengmyeon broth, it has a deep flavor. It's like an upgraded version of cold ramen made with plain water. The dongchimi-flavored naengmyeon broth and the spicy yet savory Anseongtangmyeon soup base surprisingly complement each other very well. Although only half a spoon of sesame oil is added, it plays a significant role in enhancing the aroma and stimulating the appetite. Since the soup base is quite strong even when using only half, it is best to add half first and adjust the amount after tasting before adding ice. Remember, the noodles should never be cooked al dente; they must be fully cooked.
Bibim Cold Ramen
Ingredients
Bibim ramen, naengmyeon broth, boiled egg, radish sprouts, chicken breast
Instructions
① Boil the noodles, then rinse them in cold water.
② Pour naengmyeon broth over the noodles and drizzle the sauce.
③ Add toppings to finish.
This is similar to bibim mulnaengmyeon, which is between bibim naengmyeon and mul naengmyeon. It’s cool and tangy?the very taste of summer. The refreshing flavor stands out more than the spicy taste of bibim noodles, and thanks to the tangy broth, the chicken breast’s typical gamey taste is hardly noticeable. If you want it spicier, you can add young radish kimchi and enjoy it like kimchi-mari guksu (kimchi-wrapped noodles). For a side dish, crispy fried gunmandu (fried dumplings) are recommended.
