Korean Air "Satisfying Skyway Customers' Taste with 3 New In-flight Meal Menus"


[Asia Economy Reporter Kiho Sung] Korean Air announced on the 7th that it will introduce three new in-flight meal menus.


The newly launched in-flight meals this month include three dishes: Korean dishes Bulgogi Mukbap and Bibim Guksu, and a Chinese dish, Jjamppong.


Along with the mackerel braised dish and spicy pork ssambap that have been served since March, the company expects these to become representative in-flight meal menus for Korean Air.


The Mukbap served this month was developed as a low-calorie healthy meal concept for summer, catering to recent customers' preference for well-being, and is offered in all classes. The idea originated from serving a cool cold soup to relieve the summer heat. The muk is made from 100% acorn, increasing customer preference. It is seasoned with various spices including red pepper powder based on white kimchi, maintaining a consistent taste without any odor while preserving a crunchy texture.


Another menu is ‘Buckwheat Bibim Guksu.’ Its main feature is allowing passengers to enjoy noodles that feel freshly boiled on the ground while in-flight. To address the inconvenience of noodles sticking together in existing in-flight noodle dishes, numerous tests were conducted with various types of noodles. As a result, the answer to a chewy texture was found in 100% buckwheat noodles, which also enhanced the unique aroma of buckwheat.


The Jjamppong, launched this month by Korean Air, was developed over about a year with the goal of delivering the texture of ‘noodles straight from the restaurant,’ along with Jajangmyeon, which was served from March until last month. To find the proper texture for the noodles, extensive testing was done with various Chinese noodles, resulting in noodles that can be cooked even in the in-flight environment. Jjamppong can be enjoyed as a snack in First Class on Korean Air flights departing from Korea.


Additionally, starting this month, customers traveling on long-haul routes in premium classes will be served three items: sherbet, detox juice, and fresh fruit jelly.
