[Asia Economy Reporter Moon Hyewon] bhc Group's ‘Jokbal Sanghoe’ announced on the 22nd that it will launch three new summer menu items: ‘Wasabitok Naengchae Jokbal’, ‘Spicy Cold Kalguksu’, and ‘Spicy Cold Kalguksu Bossam Set’.

Wasabitok Naengchae Jokbal features a unique twist by replacing the commonly used mustard sauce in traditional naengchae jokbal with fresh wasabi, delivering a sharp yet clean taste that targets the adventurous palates of the MZ generation. The sauce presentation is also distinctive. Unlike conventional naengchae jokbal, thinly sliced jokbal is spread widely over the cold sauce poured on the plate, allowing the sauce to evenly soak in. Additionally, toppings such as chamnamul (Korean wild chervil), onion, cucumber, peppers (Cheongyang chili, red chili), and garlic are added to fill the mouth with a refreshing and fragrant flavor. The brand strictly adheres to its principle of using only meat boiled on the same day. The broth is made by simmering 10 kinds of medicinal herbs including astragalus, oriental raisin tree, and cinnamon bark, then boiling 100% domestically sourced pork trotters to eliminate any unpleasant odor. Notably, the jokbal’s characteristic sweetness and glossiness are enhanced using traditional malt syrup passed down through three generations.

Spicy Cold Kalguksu utilizes chive fresh noodles from Jokbal Sanghoe’s popular menu item ‘Fish Soup Kalguksu’. The noodles are served with cold broth containing crushed ice, achieving both a chewy texture and visual appeal. Crisp white kimchi, cucumber, and perilla leaves are added to enhance the chewiness and refreshing sensation, while a tangy and spicy seasoning sauce combined with savory roasted sesame salt maximizes the umami flavor.

The Spicy Cold Kalguksu Bossam Set is a combo menu featuring the ‘Spicy Cold Kalguksu’ paired with bossam (boiled pork wraps). The warm bossam and the newly introduced spicy cold kalguksu create a perfect harmony that provides energy to beat the summer heat.
