[Asia Economy Reporter Choi Saeng-hye] Hasol FnB announced on the 23rd that Jeju Eunhee-ne Haejangguk, whose corporation was established in 2016, achieved sales of 6.7 billion KRW in the first half of the year including affiliated companies. It is expected that the total sales for this year will reach 15 billion KRW.
Hasol FnB established its corporation in September 2016 and opened the Jeju Eunhee-ne Haejangguk main store in Ilsan, Goyang-si, Gyeonggi-do in November of the same year, starting with haejangguk and dombe-gogi. After four years, the number of directly managed stores has increased to six, franchise stores to 45, and there are three factories producing processed food products. Next year, with the establishment of another factory, the company will have the capacity to supply goods to more than 100 direct and franchise stores through automated processes.
The most important basics for a franchise company are consistent product taste and franchisee startup training. Jeju Eunhee-ne Haejangguk repeatedly experimented dozens of times to extract the best flavor by simmering Korean beef leg bones in stages for the broth. Since the broth’s umami flavor could not be achieved by leg bones alone, various umami ingredients were mixed and adjusted repeatedly. After time, data, research, and analysis, the current broth, processed meat, and seonji (coagulated ox blood) were developed.
Additionally, the ratio of eight ingredients used in one bowl of haejangguk was studied and adjusted. Through this process and period, the manufacturing method and the haejangguk produced by Jeju Eunhee-ne Haejangguk received a patent from the Korean Intellectual Property Office. They are currently preparing for patent certification of the unique product using the manufacturing method and produced seonji.
Before opening a franchise store, franchisees receive 10 days of training at the Ilsan main store. They prepare ingredients received from the company’s factory, cook in the kitchen following recipes, and learn customer service methods through theory and practice, enabling even first-time restaurant owners to perform on-site tasks immediately. Two days before opening, a dedicated supervisor is dispatched to the store to cultivate the franchisee’s practical skills. Additionally, supervisors check and guide franchise store operations, recipe verification, and hygiene quarterly.
Jeju Eunhee-ne Haejangguk officially received technology transfer from ‘Eunhee-ne Haejangguk’ in Jeju Island, paying royalties and signing a contract. After filing intellectual property rights under Jeju Eunhee-ne Haejangguk, the franchise business began on the mainland.
