Controversy has arisen after a consumer who ordered 2kg of red sea bream sashimi from a regular market seafood restaurant checked the weight at home and found it to be only 258g.


Generally, sea bream and other species in the Sparidae family have large heads, so the actual weight after preparation can be as low as 30% of the original fish. In comparison, fish like flatfish can yield up to 50%, making it clear that obtaining a large amount of pure fillet from sea bream is difficult.


However, in this case, the yield was barely over 10%. Kim Jimin, a fish columnist who runs the seafood-related YouTube channel "Memories of Bites TV," also introduced the story in his video on the 28th, stating, "The seriousness of this issue is significant. Those with high blood pressure should be cautious."


Subscriber A, who submitted the story, said, "I placed a phone order for 2kg of red sea bream and 2kg of gizzard shad at a market in Daegu. The prices were 27,000 won per kilogram for sea bream and 23,000 won per kilogram for gizzard shad, and I paid a total of 100,000 won."


However, when A returned home, the amount of sea bream seemed too little, and upon checking the weight personally, it was only 258g on the scale. A then called the shop owner and asked, "What is the yield rate for sashimi?" The owner checked with the manager and replied, "Sea bream is 40%, and gizzard shad is 50%."


A then asked to speak directly to the manager and questioned, "Are you manipulating the yield rate? Can you guarantee that?" but reportedly received no answer. The owner then got back on the phone and told A, "If you send me your bank account number, I will refund you the amount for 1kg of sea bream."


The YouTuber also commented, "Even considering the large head of sea bream, I have seen skilled people achieve a 40% yield. Usually, it's about 38%, and if the yield is low, around 33%." He added, "Assuming an average yield of 35%, 2kg should result in about 700g of pure fillet."
