On July 3, Ayoung FBC announced that it will open The Pairing, a glass wine dining restaurant, at Lotte Avenuel Jamsil in Seoul. The Pairing is the largest glass wine dining establishment in Korea, where guests can enjoy more than 1,000 varieties of wine by the glass. It offers a gourmet experience that delights both the eyes and palate, combining chef-driven cuisine with curated pairings by professional sommeliers.

To celebrate its opening, a variety of promotions will be held to allow guests to experience premium wines at accessible prices. Guests will be welcomed with a complimentary glass of 'Palmer Brut Reserve' champagne, and ultra-premium champagnes such as 'Piper-Heidsieck Rare' and the five great chateaux including 'Chateau Margaux' and 'Chateau Latour' will be available at discounts of up to 30%. According to the company, The Pairing is introducing a new consumer trend by making high-end wines more accessible in everyday life, as guests can enjoy these premium selections by the glass.

The Pairing is designed to go beyond simple dining, creating the most ideal harmony between a glass of wine and a plate of food. Every menu item is paired with a recommended glass of wine, and a resident professional sommelier is always available to suggest a personalized 'Wine Pairing of the Day' based on each guest's preferences.

The menu also changes depending on the time of day. At lunch, casual options such as the 'Lunch 5-Course' (39,000 KRW) and 'Glass Pairing' (29,000 KRW) are offered for shoppers, while in the evening, the 'Dinner 8-Course' (89,000 KRW) and 'Wine Pairing Course' (59,000 KRW) provide a refined French-inspired experience. Based on a selection of 300 to 1,000 wines by the glass at all times, a variety of monthly themed promotions will also be held.

The Pairing was created by renovating the previous 'Club Coravin' space. Club Coravin was known for its Coravin system, which allows wine to be served by the glass without opening the bottle, enabling premium wines to be preserved without oxidation and allowing guests to sample a wide range of wines. By maximizing the advantages of this system, the renewed Pairing has expanded its wine list, improved storage stability, and increased operational efficiency.
