Special Menus Featuring Premium Ingredients and Exclusive Recipes Released
As the full-fledged monsoon and heatwave season arrives, the hotel and resort industry is focusing on the health food category, which helps restore energy. They are making a strong push with premium products that combine high-quality ingredients and special recipes from top chefs.

According to the industry on June 21, Hotel Shilla has launched a premium summer health food gift set targeting Chobok, which falls on July 20 this year. The lineup includes 14 varieties, such as 'Premium Shilla Samgyetang' and 'Premium Hanu Galbitang', both prepared under strict standards and thorough quality control.
Among these health food products, the most popular is the Premium Shilla Samgyetang. This dish features a special recipe developed by the hotel’s chef, allowing customers to enjoy the deep and rich flavors of the hotel at home. The hotel emphasized that the dish combines tender, gently steamed (cooked by steaming ingredients in a preheated steamer) locally sourced chicken and abalone with a carefully simmered broth, delivering both rich flavor and nutrition.
The Premium Hanu Galbitang uses only ribs and brisket carefully selected from antibiotic-free, eco-friendly Hanu farms, resulting in exceptionally tender meat. This menu item also features a Hanu broth made with Hotel Shilla’s unique recipe, offering a much deeper and richer taste.
These gift sets are delivered directly by Hotel Shilla’s delivery staff, who have received systematic service training. Orders can be placed through the premium online mall 'The Shilla Shop' until July 4, and the products will be sold in limited quantities via a pre-order system.
Lotte Hotel Seoul will offer a special summer health menu until August 31. First, the Chinese restaurant Dorim has launched a summer special course featuring seasonal ingredients. The signature dish is 'Paljin Naengmyeon', made with eight rare ingredients such as sea cucumber, silky fowl egg, and abalone.
Additionally, the lunch course features a mild steamed dish using butterfish, while the dinner course offers 'Chubok Buldojang', a health-boosting menu made with chubok (dried abalone tenderized by pounding), known for its chewy texture.
At Momoyama, the restaurant specializing in kaiseki cuisine, the 'Natsu (Natsu·summer)' course is available, featuring eel, a classic summer health food, and croaker, which is rich in protein and nutrients. The course includes 'Freshwater Eel Tempoyaki', where eel and ginseng shoots are grilled with egg, and 'Croaker Hot Pot', which harmoniously combines delicate fish fillet and savory broth.
Mugunghwa, the Korean restaurant with the longest tradition among domestic luxury hotels, is offering a special course called 'Mugunghwa's Summer', designed to help restore energy during the summer. Guests can enjoy 'Imjasutang', a royal cold soup dish made with sous vide chicken breast, mung beans, and ginseng, among other healthful ingredients.

Gravity Josun Seoul Pangyo, the premium lifestyle hotel of Josun Hotels & Resorts, is introducing new health-boosting menu items at its buffet restaurant Andish. Signature dishes include 'Abalone Chohui', which highlights the deep flavor of Wando abalone; 'Steamed Octopus', combining tenderly cooked octopus and the sweetness of Chodang corn; 'Tomato Chutney Bruschetta', blending savory Serrano ham with tangy chutney jam; 'Grilled Sea Bass', made with seasonal fish; and 'Lemon Brownie', featuring lemon curd and lime zest.
In addition, Inspire Entertainment Resort is running the 'Energizing Summer Health Table' promotion at its signature dining buffet, Chef's Kitchen. The buffet features a variety of new dishes to replenish energy, such as Ohyang Samgyemari, Herbal Galbijjim, Ohyang Oxtail Stew, and Palbotang. Konjiam Resort is also holding a 'Health Food Special Promotion' at its premium Korean restaurant Damha. Highlights include the signature Eobok Jengban, now enhanced with more substantial ingredients, Samhap Boyangjuk featuring health-boosting ingredients, and Damha Eel Gui, a spicy grilled eel dish with a Bokbunja gochujang base to stimulate the summer appetite and boost stamina.
