'Jangsu vs Jeon-guk' Fermented Sauces Meet

'Cham Fermentation Festa Jangsu' Held on 23-24
"Hoping for the Establishment of Healthy Food and Eating Culture"

The hand-flavored jang (fermented paste) of grandmothers in Jangsu-gun, Jeonbuk meets the authentic fermented jang varieties from across the country.


Jangsu-gun announced on the 20th that it will hold the "2024 Cham Fermentation Festa Jangsu" over two days from the 23rd to 24th at the Jangsu Nuri Park area.


This event aims to promote the establishment of a proper food culture in response to the climate crisis and to raise awareness of the importance of fermentation by offering an agricultural culture experience. It is organized by the Jangsu-gun Rural New Vitality Plus Promotion Team (Representative Song Namsu) and the Jangsu Fermentation Research Association (Tomorrow's Table Jangsu Campus, Representative Ji Hyunsook).

At the fermentation forum, under the theme "Jangsu's Jang, Jeju's Jang, Namdo's Jang," the characteristics of jang by region and the meaning of fermentation as an alternative food culture in the face of climate change will be examined. In the Hyommat workshop, case presentations will be held with experts from various fields on the topics of "The diversity of gochujang in the Jangsu region and traditional liquor pairing, soy sauce, and sour taste."


Additionally, the event will feature exhibitions and sales of award-winning works selected at the country's only fermented food specialized awards ceremony, the "Cham Fermentation Awards," as well as permanent experience programs such as "Making Potato Gochujang with Jangsu Grandmothers." During the event, at Jangsu Bapsang, from 5 p.m., a dinner called "Fermentation Table" featuring Jangsu fermentation prepared by chefs and paebaek (traditional wedding ceremony) experts will be served.


Ji Hyunsook, representative of the Jangsu Fermentation Research Association, said, "This event is the first to bring together Jangsu's jang and jang from across the country, and I hope it will serve as an opportunity to increase many people's interest and understanding of fermentation," adding, "I hope Jangsu-gun will become a center of 'Cham Fermentation' in the future."


Choi Hoon-sik, the county governor, said, "Now that the climate crisis threatens our daily lives, I want to emphasize that traditional methods like fermentation can be a solution," and added, "I hope that healthy food and a healthy food culture will be established in Jangsu, where many elderly people live."
