Signiel Seoul Stay, 6th Anniversary of Hotel Opening
Hosts Gala Dinner with Guest Yannick All?no
Signiel Seoul's modern French restaurant Stay announced on the 20th that it will host a gala dinner featuring Michelin 3-star chef Yannick All?no on the 22nd.
Since its opening in 2017, Stay has established itself as the flagship of Signiel Seoul's vision of a 'gourmet hotel.' Despite COVID-19, it has shown a steady annual sales growth rate of about 20%. Last year, it even recorded an exceptional annual revenue of over 11 billion KRW as a single fine dining restaurant.
This gala dinner will showcase fine dining with the concept of 'the meeting of French and K-food,' harmonizing Korean spring ingredients such as deodeok and burdock with French cooking techniques. Guests will have the opportunity to experience firsthand the unique culinary movement 'Modern Cuisine' led by Yannick All?no through his in-depth research of French cuisine.
In the Michelin Guide 2023 released last year, Yannick All?no's restaurants, 'All?no Paris au Pavillon Ledoyen' and 'Le 1947 Cheval Blanc,' where he serves as owner chef, both received 3 stars.
It is rare even in France, the birthplace of gastronomy, to earn 3 stars at multiple restaurants. Nevertheless, Yannick All?no has consistently maintained this status since 2017. His restaurants worldwide earned a total of 15 Michelin Guide stars last year alone.
The gala dinner course, presented in a total of 7 courses, includes ▲ amuse-bouche composed of Korean beef tartare and cauliflower pie tea ▲ king crab salad and Osetra caviar ▲ chicken tart and black truffle coulis ▲ low-temperature cooked scallop adductor muscle ▲ cooked wild flatfish and Jeju tiger prawn mousse ▲++ Korean beef tenderloin steak, among others. The final dessert, including citrus salad and vanilla jelly, showcases Stay's originality in its dishes.
Seven carefully selected wine pairings will also be presented by sommelier Jeong Jae-hoon, who holds the French Bordeaux wine knight title.
The gala dinner, starting at 6 p.m. on the 22nd, will be limited to 60 guests.
