Breakfast Set Enjoyed at Lobby Lounge 'Badang'
Two Types of Bagels Researched and Developed Over 6 Months by Pastry Chef
Jeju Shilla Hotel announced on the 20th that it will introduce 'Morning Meal,' a simple yet hearty way to start the day.
The Morning Meal, offered at the lobby lounge 'Badang,' consists of a warm soup of the day, two types of bagels (Salt Butter and Olive), and one type of pastry. In particular, the bagels were newly launched after six months of research and development by the skilled patissiers at Jeju Shilla Hotel.
The patissiers at the Pastry Boutique experimented with various methods from dough preparation to fermentation and baking to create bagels with the Korean-preferred texture of 'geotba-sokchok' (crispy on the outside and moist on the inside). Jeju Shilla Hotel’s bagels use a tangzhong dough (a dough made by boiling water to increase the flour’s viscosity) combined in an optimal ratio with a natural fermentation starter made from Jeju seed potatoes. They are aged at low temperature for about 24 hours, resulting in bagels with thin crusts and moist interiors.
The Salt Butter and Olive bagels are made with ingredients that maximize chewy texture and flavor. The Salt Butter bagel uses 'Guerande Fleur de Sel,' a premium French salt rich in minerals and low in bitterness, allowing you to enjoy the unique umami of salt blended with butter. The Olive bagel features fresh Italian green olives and Swiss Gruy?re cheese, highlighting the olives’ firm texture and rich, savory aroma. Cream cheese and pickle jam are served alongside the bagels to suit individual preferences.
Meanwhile, Jeju Shilla Hotel is launching the 'Morning Break' package, which includes the Morning Meal. The package includes a one-night stay in a mountain-view standard room and Morning Meal for two, available until March 31.
The Morning Meal set is served exclusively to guests using the Morning Break package at the lobby lounge Badang from 8 a.m. to 10 a.m. Bagels can also be purchased individually at the 'Pastry Boutique' next to Badang.
