[Asia Economy Reporter Song Seung-yoon] Pulmuone Foods announced on the 5th that it has launched 'Bol-katsu,' a crispy fried product made from pollock surimi.
The new Bol-katsu comes in two varieties: Plump Shrimp and Egg Potato. It is a premium convenience food made by shaping high-quality pollock surimi, sourced from Alaska?known for its pristine natural environment?into round balls, coating them with breadcrumbs, and frying them. Using 7mm-sized wet breadcrumbs, the product achieves a crispy exterior and moist interior texture.
The Plump Shrimp Bol-katsu features large, plump whiteleg shrimp mixed with pollock surimi, offering a chewy texture. It uses whiteleg shrimp sized 71?90 pieces per kilogram, which provides a firm bite that does not easily crumble. The Egg Potato Bol-katsu wraps pollock surimi around a spread made by mixing coarsely chopped boiled eggs and potato salad, delivering a savory and mild flavor.
The new Bol-katsu is a frozen home meal replacement (HMR), making storage and cooking convenient. Cooking it in an air fryer for 8 minutes allows consumers to easily enjoy crispy fried food at home.
A Pulmuone Foods representative said, "We planned this new product to introduce a new category to the fish cake market, which mostly consists of square or stick-shaped products for stir-fry or soup dishes," adding, "We hope many consumers can conveniently enjoy delicious Bol-katsu at home, as it offers great taste, nutrition, and simple cooking methods."
