Lotte Tour Development announced on the 11th that the Grand Hyatt Jeju, located within the Jeju Dream Tower complex resort, is intensifying the premiumization of its F&B outlets by featuring six global star chefs, including Executive Chef Oliver Weber.


A representative from Lotte Tour Development stated, "With the lifting of social distancing measures, demand for hotel F&B outlets has increased," adding, "In response, we are upgrading our F&B menus and services and introducing various premium gourmet experiences."


Earlier, on the 15th of last month, the 'Grand Kitchen' was renewed and reopened as a premium buffet in the style of Las Vegas, USA. In March, the Japanese restaurant 'Yumeyama' enhanced its dining & bar menu with three concepts: izakaya, sushi, and teppanyaki. Customers booking rooms through the website and online travel agencies (OTA) are also offered a welcome service featuring bluefin tuna tartare and a glass of Mo?t & Chandon. Last year, following the Grand Kitchen, the 38th-floor 'Pocha,' casual restaurant 'Cafe 8,' and Korean restaurant 'Noknamu' were added, allowing guests to choose their preferred breakfast among four options, thereby expanding customer choice.


Lotte Tour Development explained that this premiumization of F&B outlets was made possible through world-class manpower. Executive Chef Oliver Weber is a veteran chef with 35 years of experience, having served as Executive Chef at MGM Macau and as a founding member of MGM Cotai. Vincent Wong, the Executive Chef overseeing Chinese cuisine including the Chinese restaurant 'China House,' has 37 years of experience and has worked at Michelin-starred restaurants such as 'Lei Garden' (which received stars 81 times) and served as Executive Chef for the Shangri-La Hotel Group.


The Executive Chef of the 'Steak House,' Burton, previously served as Executive Chef at 'CUT Singapore,' Asia’s first Michelin 1-star restaurant launched by Wolfgang Puck, and at 'SW Steak House' in the Macau Wynn Palace complex resort. Grand Kitchen Executive Chef Kim Young-min is an 18-year veteran who served as Executive Chef at 'Fontana,' the buffet restaurant at Macau Wynn Palace. Cafe 8 Executive Chef Mario Caramela is an Italian chef with 40 years of experience, having spent over 20 years at Hyatt hotels in the Asia-Pacific region. Executive Chef Kojima Yumeyama, formerly of Grand Hyatt Dubai and SLS Hotel Bahamas, also joined this year to lead the Japanese menu revamp.


Meanwhile, on the 15th, a Job Concert will be held at the banquet hall on the 4th floor of the Jeju Dream Tower complex resort. Recruitment for the culinary team will also take place among the 16 overall departments. Executive Chef Oliver Weber said, "It is rare to find a domestic hotel with multiple global star chefs. We plan to recruit talent to grow together at Grand Hyatt Jeju, the second largest Grand Hyatt in the world and the largest single-brand Grand Hyatt in Korea."
