Michelin 1-Star Chef Burton Yi Launches 'Dream Burger'
"Steak Grilling Technique Brings Out the 'Fire Flavor'"
[Asia Economy Reporter Yuri Kim] Jeju Dream Tower Complex Resort announced on the 7th that Burton Yi, the head chef of the 'Steak House' and a former Michelin 1-star chef, has launched a handmade burger called the 'Dream Burger.'
The Dream Burger at Grand Hyatt Jeju's 'Steak House' is a U.S. Prime handmade cheeseburger created by steak specialist Burton Yi, who has 20 years of steak experience. It is made using a steak grilling technique that preserves the juiciness and fire flavor, allowing customers to enjoy its rich taste.
The hotel explained, "The house-blended patty is made from U.S. Prime beef, the highest grade of American beef, combined with onion marmalade made by simmering Jeju-grown onions for six hours, smoked bacon sliced from whole pork belly, cheddar cheese aged 9 to 12 months, and jalape?o mayo sauce, delivering a deep and rich flavor."
The burger bun was also crafted by Philippe Daue, the pastry executive chef. Served with French fries, it makes a perfect lunch meal. It is available only during lunch from 11:30 AM to 3:00 PM (except Mondays and Tuesdays).
In addition, there are lunch-exclusive menus such as Korean beef sandwiches, Boston lobster rolls, and grilled sea bass, as well as unique appetizers rarely found in Korea, including iceberg lettuce salad with buttermilk dressing and Maryland-style jumbo crab cakes.
A representative of Jeju Dream Tower Complex Resort said, "With the view from Jeju’s highest floor (38th floor) and world-class chefs preparing handmade burgers on the spot, it will be a unique 'fine dining in the sky' experience. The differentiated handmade menu in taste, texture, and visual appeal is perfect not only for gourmets but also for the MZ generation (Millennials + Gen Z) seeking new experiences."
Meanwhile, Chef Burton Yi was recruited as the head chef of Grand Hyatt Jeju's 'Steak House' in July. He is a steak specialist who has served as head chef at Michelin 1-star restaurants such as 'Cut Singapore,' Asia’s first Michelin 1-star restaurant launched by Wolfgang Puck, one of the world’s top steak chefs, and at 'SW Steak House' in the Wynn Palace complex resort in Macau.
