[Asia Economy Reporter Kim Yuri] The hotel industry has launched a variety of health-boosting dishes to capitalize on the summer peak season. Reflecting the MZ generation's 'flex' culture, they are offering menus made with premium ingredients that restore both taste and health. In particular, with the recent increase in social distancing measures, they have strengthened non-face-to-face methods such as to-go boxes and delivery services.
Paradise Hotel Busan announced on the 24th that the 'Samgyetang To-Go Box' for 30 servings, released on the 21st to mark Jungbok (the hottest period of summer), sold out early. Made with a recipe from a top domestic chef, the samgyetang broth is simmered for over five hours with chicken bones and traditional Korean medicinal ingredients such as astragalus, kudzu root, angelica, acanthopanax, and aralia. The dish also includes energy-boosting ingredients like Geumsan ginseng, Wando abalone, pine mushrooms, cordyceps, chestnuts, jujubes, and glutinous rice. A representative from Paradise Hotel Busan said, "The samgyetang to-go box, limited to 30 servings per day, sold out quickly on the same day, and inquiries for re-release from customers continue. We plan to actively introduce premium menus created by the experienced chefs of Paradise Hotel Busan's flagship food and beverage outlets."
Meanwhile, Sakka, the Japanese restaurant at Paradise Hotel Busan, offers a 'Healthy Course Meal' featuring high-protein nutritious dishes such as hamo (daggertooth pike conger) shabu-shabu and special marinated beef short ribs. The Chinese restaurant Nampung presents the 'Buldodjang Special Course Meal,' a healthy reinterpretation of Cantonese Chinese cuisine including shark fin stew, sea cucumber dishes, and buldodjang.
JW Marriott Dongdaemun Square has also introduced the 'JW Health Food To-Go' service, where customers can pick up or receive via quick service health-boosting dishes that recreate samgyetang as a well-being meal through drive-thru or quick service. The set includes 'Black Glutinous Rice Abalone Samgyetang,' which contains ingredients that help restore energy such as black glutinous rice, abalone, ginseng, jujube, and chestnuts, along with garlic salad and samchae salad. These are available for pickup or delivery through the platform 'Baedal Minjok.'
Grand InterContinental Seoul Parnas sells a unique health-boosting dish called 'InterContinental Premium Chicken,' prepared directly by chefs using a patented exclusive cooking method, as a to-go product. This menu features a tender texture achieved through a natural carbonated water brining technique from Chojung-ri. It is available in two styles: richly flavored roast chicken and Chinese-style Shaoqi chicken. Orders and purchases can be made at the Grand Deli located on the first floor of Grand InterContinental Seoul Parnas.
Earlier, Hotel Shilla launched a 'Gift Set Exclusive Health Food Delivery Service' considering the increasing consumption of non-face-to-face and premium gift sets. The representative health food menu, 'Jeongseon (精選) Samgyetang,' is made by steaming organic chicken and abalone in a steamer preheated to 100 degrees Celsius, then cooling it, and packaging it with broth crafted from the experience of Hotel Shilla chefs. The gift set was delivered contactlessly by delivery staff who had undergone systematic service training and ensured personal quarantine to minimize contact with customers.
