The Jeungsuk method is a cooking technique that involves steaming to cook food, preventing the loss of effective food components and spoilage. Since the ingredients are heated indirectly, the shape of the food does not deform, and nutrient loss can be minimized.
According to Dr. Lee, the steaming cooking method, Jeungsuk, which has existed for thousands of years, not only tastes good but also brings out the inherent value of the ingredients. For example, abalone, which is good for the body, becomes sweeter and more delicious through the Jeungsuk method, and its texture and moisture are enhanced, making it easier for children and the elderly to absorb.
The downside of the Jeungsuk method is that it takes longer than direct heating of ingredients and thus uses more fuel. Additionally, it is difficult to stand in front of the fire for a long time during the summer, which makes it less preferred.
