Collaboration of Professors and Students from Sarang Nanum Center, Food Nutrition, and Culinary Science Departments for Talent Sharing
[Asia Economy Honam Reporting Headquarters Reporter Yoon Jamin] Honam University (President Park Sangcheol) delivered and cheered on nutritious lunchboxes made directly by students and professors to medical staff who are putting their utmost efforts into COVID-19 prevention during the Chuseok holiday and to child protection institutions that suffered flood damage from the heavy rains last summer.
On the 25th, Honam University handed over 200 nutritious lunchboxes to Kim Samho, Mayor of Gwangsan District, Gwangju Metropolitan City, and Kim Okhyun, Director of the Health Center, offering comfort and encouragement to healthcare workers exhausted from continuous testing and quarantine efforts to overcome COVID-19.
The delivery of the love-filled nutritious lunchboxes was organized by the Honam University Love Sharing Center (Director Jin Kyungmi) as part of a community-linked talent-sharing volunteer service.
The Department of Food and Nutrition (Head Gil Jinmo) designed a diverse nutritious menu rich in nutrients to boost immunity and aid fatigue recovery for health management.
Professors and students from the Department of Culinary Science and Food Service Management (Head Kim Younggyun) prepared the meals from early dawn, cooking rice and dishes with strict hygiene management to create “a meal rich in taste and nutrition.”
The lunchbox menu was composed of seasonal healthy dishes to enhance immunity, crucial for overcoming COVID-19, including pumpkin nutritious rice with fresh ginseng, raw chestnuts, and ginkgo nuts; Gwangsan District’s representative dish, Korean beef tteokgalbi; mackerel and dried radish greens braised in omega-3 rich sauce; fresh chive salad for energy recovery; shiitake and oyster mushroom stir-fry to help with lethargy; rolled omelet; spicy baby octopus and bell pepper cold salad; altari pickles; and asparagus to aid fatigue recovery.
The “Love Nutritious Lunchboxes” were delivered to institutions in the Gwangsan area, including the Gwangsan Health Center, medical staff at screening clinics, Choroknamu Daycare Center which suffered flood damage from last summer’s heavy rains, traditional markets, small and medium-sized enterprises, the Gwangsan Corporate Doctor Center supporting business consulting for small business owners, and the Gwangsan Children’s Meal Management Support Center.
Jin Kyungmi, Director of the Love Sharing Center, said, “Ahead of the Chuseok holiday, we thought that a meal would be like a tonic for those exhausted by COVID-19 prevention and social distancing, so we decided to deliver these lunchboxes. We hope that the lunchboxes, filled with Honam University’s gratitude, will serve as a small comfort and message of encouragement.”
