[Asia Economy Reporter Seungjin Lee] Lotte Mart is offering the summer health food 'Aged Minoh Sashimi' at a reasonable price.
On the 14th, Lotte Mart announced that it will sell 'Aged Minoh Sashimi (120g)' for 16,800 won. The sale will be held for only one week starting from the 16th.
Minoh is in significantly short supply compared to demand, and during the summer, the price of wild-caught Minoh rises to 70,000 to 80,000 won per kilogram. However, due to the impact of the novel coronavirus disease (COVID-19) this year, domestic consumption has decreased, resulting in prices around the high 30,000 won per kilogram range.
Accordingly, Lotte Mart judged that it is possible to commercialize Minoh, considered a premium fish, at a reasonable price.
The newly introduced 'Aged Minoh Sashimi' is characterized by using wild-caught Minoh from Moseulpo Port in Jeju Island, processed with the 'ikejime' technique (a method of instantly severing the nerves to kill the fish immediately), minimizing live fish stress and delaying rigor mortis to maximize freshness.
Additionally, the aged Minoh sashimi is processed in a facility equipped with HACCP (Hazard Analysis and Critical Control Points) and packaged using MAP (Modified Atmosphere Packaging) to ensure product safety.
Yang Seungwook, Lotte Mart's Seafood MD (Merchandiser), said, “This product faithfully reproduces the taste of aged Minoh sashimi sold at Japanese restaurants,” adding, “We hope this will be an opportunity for customers to enjoy the premium fish Minoh as a health food without burden.”
