▷Ingredients (Serves 2)
1/2 head of broccoli, 1/2 cup cashew nuts, 1-2 tbsp starch water (2 parts water, 2 parts starch powder), 1 tbsp chili oil, 1 tbsp cooking oil, 0.5 tbsp minced garlic, 2-3 dried chili peppers, 1/2 cup water, 0.5 tbsp oyster sauce, 1 tbsp soy sauce, 1 tbsp cooking wine, salt and pepper to taste
▷Instructions
★ Cooking time: 25 minutes
1. Cut the broccoli into bite-sized florets, blanch them in boiling water with salt, rinse in cold water, and drain.
2. Prepare the cashew nuts as they are and prepare the starch solution.
3. Add chili oil and cooking oil to the pan, then add minced garlic and dried chili peppers. Stir-fry for about 1 minute without burning, then add 1/2 cup of water.
4. Add oyster sauce, soy sauce, and cooking wine, and bring to a boil. Once the broth is boiling, add broccoli and cashew nuts. Adjust the thickness with starch water and season with salt and pepper.
