Philana Bouvier, President of Demeine Estates, which owns Heitz Cellar, said this in a recent interview with The Asia Business Daily, emphasizing, "Heitz Cellar's goal is not transformation, but continuity."
"Continuity Over Change"… The Delicate Napa Cabernet Sauvignon
Founded in 1961, Heitz Cellar is a name that is always mentioned when discussing the modern history of American wine. As the creator of Martha's Vineyard, the first single-vineyard Cabernet Sauvignon wine in the United States, it is a winery that symbolizes the authenticity of premium Napa Valley wines. Even today, Heitz is recognized as the producer that most clearly represents the concept of "classic Napa," adhering to traditional long-term aging methods and organic, eco-friendly farming practices.
Heitz Cellar entered a new phase in 2018 when it was acquired by the agricultural and investment company Lawrence Family. However, there was no change in style. Instead, investments were made to further solidify the existing philosophy. Bouvier explained, "Heitz was already an excellent winery, and what we needed to do was invest in better vineyards, improved facilities, and a more stable team," adding, "There was not a single reason to change the style." Chief winemaker Brittany Sherwood, who worked with the previous chief winemaker for many years, is responsible for continuously recreating Heitz's signature delicate winemaking style.
The core of Heitz Cellar lies in its "gentle Napa Cabernet Sauvignon"-a winemaking philosophy that avoids excessive concentration or raising alcohol levels. Bouvier said, "Many consumers think of Napa reds as powerful, heavy, and high in alcohol, but Heitz stands in the opposite direction," explaining, "Our wines have excellent acidity, refined aromas, soft tannins, and an alcohol content below 14%, making them harmonious with food. They are enjoyable immediately after opening and continue to shine even after ten years."
In practice, Heitz Cellar maintains low tank temperatures during fermentation, harvests grapes early, and selects barrels from different coopers for each vineyard. These methods are designed to create a refined structure rather than excessive strength. The main lineup, including Martha's Vineyard, Trail Side Vineyard, and Linda Falls Vineyard, are all produced as 100% Cabernet Sauvignon. Notably, the 1974 vintage of Martha's Vineyard was selected by Wine Spectator as one of the "12 Wines of the 20th Century," making it an iconic vineyard in American wine history.
"The Napa Wine Sought by Millennials & Gen Z? A Style Like Heitz"
Interestingly, the classic character of Heitz Cellar is being embraced more naturally by younger consumers. Bouvier noted, "Today's consumers in their 20s and 30s value quality over quantity," adding, "They look for wines that pair well with food, are not overwhelming, and do not leave them feeling tired the next day. Heitz perfectly meets these demands." This is why Heitz Cellar, while maintaining a classic style based on long-term aging, does not feel old-fashioned to the younger generation.
Bouvier stated that, in response to these market trends and to elevate the value of the classic, Heitz Cellar plans to reduce production volume and continuously improve quality. "Heitz will focus on making 'better wine,' not 'more wine,' in the future," she emphasized. Currently, Heitz Cellar exports to 22 countries, with a long-term goal of expanding to 50-60 countries. She said, "I hope that wherever you go, you can find Heitz Cellar on the wine list," adding, "I dream of the day when Napa classics are naturally chosen on tables around the world."
Bouvier expressed her hope that Heitz Cellar will not be a high-priced wine reserved only for special occasions, but a timeless classic that remains by everyone's side. She said, "Heitz Cellar will become more delicate rather than stronger, and loved for longer rather than just more expensive. Instead of following short-term trends, we aim to set the trends ourselves."
