Achieving Deep and Rich Flavor Using Only Plant-Based Ingredients
Since its initial launch in 2020, Roasting Jeongmyeon has established itself as Pulmuone's flagship vegan ramen (dried noodles) product. The secret to its deep and rich flavor, despite using only plant-based ingredients, lies in Pulmuone's unique dried noodle manufacturing technology, the "HTT (High Temperature Touchdown Roasting) roasting method." This technique reduces the raw flavors of 12 vegetables, including mushrooms, onions, and cabbage, while enhancing their distinctive tastes. Additionally, broth made from soybeans and seasoning bases crafted from fermented sauces are added, resulting in a rich and savory flavor profile similar to that of meat broth.
Pulmuone plans to further strengthen Roasting Jeongmyeon's presence as a vegan ramen by incorporating it into the Pulmuone Jigu Sikdan product lineup, making it easier for consumers seeking plant-based foods to recognize. The company aims to expand its reach not only among strict vegan consumers but also among flexitarians who occasionally opt for plant-based diets.
Furthermore, the product reflects the preference among plant-based food consumers for lighter meal options. Dried noodle products generally have about 100 kcal fewer calories than fried noodles; in particular, this product contains only 335 kcal per serving, the lowest among Pulmuone's dried noodle offerings, making it an easy, guilt-free choice.
To ensure that consumers can intuitively recognize it as vegan ramen, the package features the "Jigu Sikdan" brand name and a "vegan certification" mark. This product first obtained vegan certification from the Korea Agency of Vegan Certification and Services in December 2020 and has completed recertification following its renewal.
