Using 7 Types of Alternative Meat and Vegetables
Reducing Sweeteners and Colorants
0g Trans Fat and Cholesterol Content
Hyundai Green Food, a comprehensive food company affiliated with Hyundai Department Store Group, announced on the 13th that it will launch a new product, 'Greeting Vegetarian Dumplings,' under its care food specialty brand 'Greeting.'
Greeting Vegetarian Dumplings were jointly developed by researchers from 'Greeting Lab,' Hyundai Green Food's dedicated research team for Greeting, and the alternative meat specialist company 'Jiguin Company.' The product is characterized by using no meat at all and being flavored entirely with plant-based ingredients.
The alternative meat used in Greeting Vegetarian Dumplings is a blend of two types of 'Textured Vegetable Protein (TVP)' extracted from soybeans to enhance texture, and seven kinds of vegetables including domestic garlic, ginger, chives, and onions were used to minimize the unique raw bean taste of soy meat. For the dumpling skin, a 'vacuum mixing' process that removes air bubbles from the dough maximizes elasticity, maintaining a chewy texture even after cooking. Additionally, the company explained that the product is rapidly frozen at below -35 degrees Celsius, allowing consumers to enjoy the original taste of the ingredients even after cooking.
A Hyundai Green Food official stated, "Greeting Vegetarian Dumplings do not contain sweeteners or colorants such as aspartame, D-sorbitol solution, acesulfame potassium, or water-soluble annatto," and added, "The trans fat and cholesterol content are also only 0g."
The new product will be sold on Hyundai Green Food's official online mall, 'Greeting Mall,' and at Hyundai Department Store food halls nationwide. In the future, it will also be supplied to B2B customers such as group catering and food material companies.
