Lotte Hotel Gathers Popular Chinese Menu Items by Chain... Suhwa Suchae Launches

First Product from Newly Established 'Culinary R&D Lab' Earlier This Year

On the 31st, Lotte Hotel Seoul and Lotte Hotel World announced that they will be offering the 'Suhwasuchae' course, which combines representative Chinese dishes from their chain hotels.


Suhwasuchae is a product first introduced earlier this year by Lotte Hotel's newly established Culinary Research and Development (R&D) Department. The Culinary R&D Department was created for the first time at Lotte Hotel to standardize recipes to provide the best dishes at each restaurant and to strengthen distinctive menus for each chain.

As the meaning of Suhwasuchae suggests?'accepted, harmonized, and colored'?the course harmoniously combines popular signature dishes from Dorim at Lotte Hotel Seoul, Dorim The Canton Table at Lotte Hotel World, and Chaoran at Signiel Busan, allowing guests to experience Lotte Hotel’s unique Chinese cuisine world. It will be available at Dorim in Lotte Hotel Seoul and Dorim The Canton Table in Lotte Hotel World until July 31.


The course consists of a total of seven dishes. The appetizer features 'Minari Yukhoe Yangjangpi' from Dorim at Lotte Hotel Seoul, highlighting savory raw beef and fresh seafood. It is accompanied by the fragrant minari and Huajou oil, which imparts the authentic flavor of Sichuan cuisine. Guests can also enjoy 'Gobeop Buldodjang,' a signature dish of Lotte Hotel’s Chinese cuisine. Gobeop Buldodjang is enriched with flavor and depth by using a rich broth simmered for over 12 hours, combined with nutritious ingredients such as sea cucumber, abalone, natural matsutake mushrooms, and fish maw.


The third course, 'Hyangra Haesam,' is a Cantonese dish from Dorim The Canton Table at Lotte Hotel World, which was renewed and reopened in January this year. It features the soft texture of sea cucumber and a spicy flavor. Guests can also enjoy 'Soy Sauce Steamed Skate Wing' and 'Jijon Galbi,' a Cantonese-style braised short rib dish. The course concludes with a 'Peach Cake' representing Dorim (peach tree forest).


Kim Song-gi, Executive Chef of Lotte Hotel, said, "As the first creation of the Culinary R&D Department, it especially reflects the efforts and passion of chefs from each chain hotel," adding, "We will provide the best experience with special dishes and heartfelt service that can only be tasted at Lotte Hotel’s Chinese restaurants."
