Busan Holds Kick-off Meeting for 'B-FOOD Recipe Development'
City, Tourism Corporation, and Columnists Attend Recipe Development Team Meeting
On the 24th at 2 p.m., Busan City held the 'Busan Food (B-FOOD) Recipe Development Kick-off Meeting' at the Dongbaekkkot Room in the Dasom Hall seminar room of Busan Citizens Park.
The development of Busan Food (B-FOOD) recipes is a project conceived through expert consultations and discussions to create new and diverse menus that highlight the unique characteristics of Busan cuisine, addressing the shortage of Busan dishes for international event banquets and the current overemphasis on Korean food.
This project aims to simultaneously achieve two goals: branding Busan food and revitalizing Busan as a global gourmet city by developing and distributing course meal recipes that not only incorporate local Busan dishes and ingredients but also tell stories unique to Busan.
Through the Busan Food (B-FOOD) recipe development project, more than 30 types of dishes will be created across four categories: appetizers, main dishes, desserts, and side dishes. These will be organized into banquet 9-course, lunch 5-course, and breakfast (Samcheopbansang) course meals.
Before full-scale development, the city formed a recipe development team in February consisting of six members, including gourmet columnist Park Sang-hyun and chefs from various fields, who conducted on-site surveys of local ingredients and case studies.
The kick-off meeting served as an opportunity for the recipe development team to introduce and present the project direction, recipes, and stories behind the dishes based on their preliminary research and investigations.
Attendees from Busan City, Busan Tourism Organization, hotel chefs, and the development team exchanged opinions on the presentations and discussed directions for developing highly refined recipes.
A recipe development team composed of experts with over 20 years of experience in their respective fields and more than 10 years of activity in Busan.
The Busan Food (B-FOOD) recipe development will be completed by the end of May after tasting and evaluation processes involving various experts such as chefs and specialists.
The completed course meals will be unveiled to the public through external tasting events, and the recipes will be disseminated via social media platforms and cooking classes to be utilized at event venues and dining establishments.
The city expects the newly developed 'Busan Food (B-FOOD) recipes' to be used as official menus at international events held in Busan, attracting visitors with dishes symbolizing Busan and contributing to the activation of Busan as a global gourmet city and food brand.
Lee Sora, Director of the Citizen Health Bureau of Busan City, stated, “We will develop ‘Busan-style’ global standard dishes and courses that reflect Busan’s local food, ingredients, history, and environment to showcase the new charm of Busan cuisine to the world.” She added, “We will continue to promote various gourmet events and content development to leap forward as a global gourmet city.”
