[Asia Economy Reporter Moon Chaeseok] Winia announced on the 26th that it has launched the 2023 model of the Kimchi Refrigerator Dimchae, featuring customized kimchi fermentation functions for all provinces nationwide and reflecting recent food culture trends.


The most notable feature is the development of a new fermentation mode tailored to kimchi ingredients specialized by region. The central style (Seoul, Gyeonggi, Gangwon, Chungcheong provinces) uses jeotguk (fermented fish sauce), salted shrimp, salted yellow croaker, and salted hwangseok fish, characterized by a mild and non-spicy taste, which has been preserved. The southern style (Jeolla, Gyeongsang, Jeju provinces) uses a lot of salt and salted seafood, emphasizing a strong seasoning and abundant spices.


For the 5-room model, a 'Seasonal Kimchi Storage Mode' was applied to easily store kimchi enjoyed in each season. In summer, it can store yeolmu kimchi; in autumn, fresh kimchi (geotjeori); and in winter, dongchimi, all at the optimal temperature for the best taste.


It also features a natural sweetener 'Mannitol+' fermentation algorithm. Mannitol is a component produced during the kimchi fermentation process that enhances umami flavor. When kimchi is fermented using the Dimchae fermentation science mode, mannitol increases more than 86 times compared to regular storage kimchi, maximizing umami and aroma.


Functions reflecting rapidly changing consumer food culture have also been applied. Reflecting the homemade and home drinking culture of the MZ generation, a fruit wine and fruit syrup fermentation mode was added. After fermentation, it automatically switches to storage mode to keep fruit wine and syrup fresh. A 'Meal Kit Storage Mode' is also included, which can keep ingredients such as vegetables in meal kits more than twice as fresh compared to a regular refrigerator.


The exterior consists of the 'Glass' line made of matte-textured glass material, the 'Ceramic Look' line characterized by a matte finish, and the 'Texture Color Metal' line, which is metallic but has a warm texture and feel. The interior has been upgraded with premium materials and deeper door pockets to enhance storage convenience. The 2023 model Dimchae comes in a total of 67 types: 49 stand-type models priced between 2.4 million and 5 million KRW, and 18 lid-type models priced between 800,000 and 1.8 million KRW.


Chansu Choi, CEO of Winia, said, "This year marks a monumental year as we surpass 10 million units produced since the first launch of Dimchae in 1995," adding, "The 2023 model Dimchae will further solidify its value as the undisputed number one kimchi refrigerator brand with its unique technology."
