[Asia Economy Reporter Yuri Kim] This summer, the hotel industry has launched an 'Iyeolchihyeol marketing' campaign. They are attracting consumers exhausted by the heat with premium health-boosting dishes made with quality ingredients and hotel chef recipes.


The buffet restaurant 'Grand Kitchen' at Grand InterContinental Seoul Parnas is offering summer health-boosting dishes presented by Chef Lee Seong-ho, who has 30 years of experience, until next month. On the first day of Chobok (the first of the three hottest days), July 11, special summer health menus such as spicy fried eel and mango watermelon will be added to each section. On Jungbok (July 21) and Malbok (August 10), grilled eel will be individually served at customers' tables. The hotel explained, "Chef Lee Seong-ho, a Korean cuisine specialist, has been invited to Vietnam, Hong Kong, Thailand, and other Asian countries to promote Korean cuisine widely. For this summer's health menu, he personally prepared royal court health dishes such as Imjasutang, herbal duck baeksuk, eel soup, and abalone nutritious rice."


Known as a royal court health cold soup, 'Imjasutang' is made by boiling native Korean chicken, deboning the meat, and simmering the chicken broth thoroughly. Cold perilla seed broth made by grinding roasted whole sesame seeds is poured over it, and meatballs and shiitake mushrooms are added as toppings, creating a savory and deep flavor. The 'Herbal Duck Baeksuk' is made by simmering domestic native duck with herbal ingredients such as astragalus, licorice, and ginseng in a pressure cooker. You can also enjoy 'Eel Soup,' which is refreshingly flavored with young radish greens and soybean paste, and 'Abalone Nutritious Rice,' which includes Wando abalone, mushrooms, lotus root, and ginkgo nuts.

Walkerhill Hotel & Resort's Korean beef charcoal grill specialty restaurant Myeongwol-gwan offers a special summer health dish called 'Samsamtang' until August 31. Samsamtang is completed by simmering Myeongwol-gwan's signature galbitang (short rib soup) with representative health ingredients such as wild fresh abalone, octopus, and 'Sugyeong Sam,' which contains saponins known to boost immunity. Ordering is available from noon to 3 p.m. and from 5:30 p.m. to 9 p.m. The price is 49,000 KRW.


Conrad Seoul's buffet restaurant Zest offers health-boosting dishes from around the world made with seasonal nutritious ingredients such as abalone, scallops, eel, and chicken from July 11 to August 15. Summer season limited global health dishes are served at Zest's open kitchen and live cooking stations. The Korean section features samgyetang and steamed abalone, while the Chinese station prepares garlic scallop stew. The Japanese section offers grilled eel marinated in the chef's special sauce, adding to the enjoyment of tasting health dishes from around the world. The health dish special is available at Zest's lunch and dinner buffet on the 2nd floor of Conrad Seoul until August 15. Prices start at 105,000 KRW (including tax, per adult).


The 'Teppan' restaurant located in the gourmet alley 322 Sowol-ro at Grand Hyatt Seoul presents new summer menu items until the end of August. The abalone served at Teppan is cooked with gompi seaweed, delivering the scent and taste of the sea without salt seasoning. The sauce made from seasonal raspberries and the energy-boosting bokbunja (Korean black raspberry) harmonizes texture and flavor. The 1+ grade Korean beef tenderloin grilled on a high-temperature iron plate is served with vegetable pur?e sweetened with the natural sweetness of chodan corn instead of sugar, water spinach, and ginseng shoots. The baby octopus is coated with corn flour and cooked on the iron plate to be crispy on the outside and moist inside. The Teppan lunch set costs 130,000 KRW, the alcohol pairing set is 200,000 KRW, and the dinner set is 210,000 KRW (tax included).
