[Asia Economy Reporter Lim Chunhan] Lotte Mart announced on the 24th that it will launch two types of charcoal-grilled meat ssam dumplings jointly developed with 'Changhwadang,' a handmade dumpling restaurant famous in Ikseon-dong, under its own brand (PB) for home meal replacements, 'Yorihada,' on the 28th.
Changhwadang is a handmade dumpling specialty restaurant that has been exclusively serving dumplings for 15 years in Ikseon-dong, Jongno-gu. Changhwadang's signature menu is charcoal-grilled pan-fried dumplings, where marinated ribs are grilled over charcoal, finely chopped, and used as the dumpling filling, resulting in a rich charcoal aroma and juicy flavor.
Lotte Mart co-developed new recipe dumplings embodying the sincerity of Changhwadang’s handmade craftsmanship. To develop frozen dumplings that capture Changhwadang’s taste and concept, dozens of test processes were conducted.
The two types of charcoal-grilled meat ssam dumplings are products that express the beloved Korean meat wrap in dumpling form. The meat, marinated in a special sauce for over 10 hours, is grilled over charcoal and wrapped in fragrant fresh perilla leaves, creating a fantastic combination. Notably, the entire process from grilling the meat over charcoal to wrapping it in perilla leaves is done by hand.
A Lotte Mart official said, “The frozen dumpling market size has continuously grown, surpassing 500 billion KRW, and frozen dumplings have become a familiar convenience food. Through joint development with brands, we plan to capture consumers’ tastes with differentiated concepts and recipes.”
