[Damyang=Asia Economy Honam Reporting Headquarters Reporter Kim Chunsu] Bamboo shoots are emerging everywhere in the bamboo forest of Manseong-ri, Damyang, Jeonnam, the hometown of bamboo.


The reason bamboo shoots are called "Juksun (竹旬)" is because the young shoots grow into bamboo within ten days (a "sun" is a ten-day period), so if you don't hurry, they become inedible.


Bamboo shoots are high in protein and rich in vitamins B1 and B2, which help relieve fatigue. They also contain a high amount of dietary fiber and are low in calories, making them effective as a diet food.


The optimal harvesting period for bamboo shoots is usually from the end of May for about a month; after this period, the shoots become tough and inedible.
