[Asia Economy Reporter Park Jong-il] Seodaemun-gu (Mayor Moon Seok-jin) will operate the 2nd Merchant School for about a month starting at the end of this month, targeting three stores in the first-floor street vendor area of Sinchon Box Square (22-5 Sinchon Station-ro), following the 1st Merchant School held in May this year with young merchants on the 2nd floor.
Through the 1st Merchant School, the stores ‘Owol-e Mannan Banana’, ‘Rooftop Camping’, and ‘Chunky Pie’ each developed madeleines, mala lobster, and meat pies, which are now popular as the signature menus of their respective stores.
In this 2nd session, hotel chefs will provide four rounds of 1:1 customized consulting per store to support the development of distinctive menus tailored to customer preferences.
Chef Kim Tae-su of Grand Hyatt Incheon Hotel will assist the ‘Imone’ store in developing Korean dishes such as Chadol Ramen and Shrimp Gimbap, which are easy to prepare and suitable for delivery.
Chef Hwang Jae-man from a five-star Japanese restaurant in Seoul will guide the ‘Jinine Cupbap’ store in cooking methods for dishes like Shrimp Soy Sauce Rice Bowl and Udon Salad, aiming to attract many female university students, the main customers of the store.
Director Kim Young-kyung of eFood Lab will support the ‘Cocoon Cup’ store in developing additional menu items such as Vietnamese spring rolls and Banh Xeo to complement their existing Vietnamese food offerings.
Lee Jeom-soon, CEO of ‘Imone’, said, “It is very enjoyable to learn special recipes directly from hotel chefs,” adding, “I feel proud of myself as I improve through the training.”
Moon Seok-jin, Mayor of Seodaemun-gu, stated, “We will continue to spare no support for the stores in Sinchon Box Square to improve the level of food culture through excellent food and to revitalize the local economy.”
