The Busan Metropolitan Office of Education is tightening school meal hygiene management ahead of the new semester. With the increased risk of food poisoning due to changes in meal service personnel and cooking environments, the office aims to enhance on-site response capabilities and achieve 'zero food poisoning incidents.'
On January 22, the Busan Metropolitan Office of Education (Superintendent Kim Seokjun) conducted the '2026 New Semester Preparation School Meal Hygiene Management Guidelines Training' for over 3,000 school meal personnel in the Busan area, including nutrition teachers, school nutritionists, cooks, and kitchen assistants. This training went beyond a simple workshop, focusing on preemptively checking all aspects of school meal operations for the new semester and strengthening on-site hygiene management capabilities.
The training was conducted in real-time through a remote format, with schools participating in group viewing sessions tailored to their specific circumstances, resulting in high participation rates. This measure was implemented to proactively address potential hygiene management variables that may arise during new semester meal operations.
The main training topics included: ▲ Key hygiene management points in preparation for joint inspections with related agencies at the start of the semester ▲ Guidelines for preventing food poisoning, including norovirus ▲ Analysis of recent major violations found in joint inspections and improvement measures ▲ Hygiene management standards for meal facilities, equipment, ingredient storage, and each stage of cooking and serving ▲ Practical guidelines for preserved food management, personal hygiene rules, and preventing cross-contamination, all designed for immediate application in the field.
In particular, explanations based on actual inspection cases and the presentation of concrete improvement measures resonated with meal service staff. The training was evaluated as having gone beyond merely conveying formal guidelines, instead raising awareness of hygiene management responsibility and enhancing self-inspection capabilities.
For schools unable to participate in the live training, the Busan Office of Education is providing the training materials on the Nutrition Education Experience Center website, allowing each school to use them as their own hygiene education resources. Through this, the office plans to ensure that a continuous hygiene management system is maintained even after the start of the new semester.
Superintendent Kim Seokjun stated, "Through this training, we have increased understanding of school meal hygiene management standards for the new semester and strengthened on-site response capabilities for food poisoning prevention," adding, "We will continue to provide support to ensure the safe operation of school meals so that students can eat with confidence."
