The bakery cafe brand Yoonsoop is continuing its global cooperation efforts through a technology exchange with a local Vietnamese bakery company.
On January 9, Yoonsoop signed a memorandum of understanding (MOU) with the local bakery brand Brad Factory in Hanoi, Vietnam, for the transfer and exchange of bakery technology. The agreement will be in effect for one year starting from January 9, 2026, and may be renewed through mutual consultation.
The signing ceremony was attended by Yoonsoop CEO Kim Yonghoon, Sonsoo Bakery CEO Kwon Junwoo, and IPA CEO Yoo Gunhee. They visited Brad Factory's local store in Hanoi and engaged in a technology exchange focused on popular Korean bakery menu items. In particular, on-site training was provided for the "Dubai Chewy Cookie," which has recently gained attention in Korea. The two companies also plan to gradually promote practical cooperation, such as staff training programs, in the future.
Yoonsoop is jointly operated by pastry chefs Kim Yonghoon, a certified Korean master baker, and his wife, pastry chef Heo Yoon. Kim Yonghoon previously served as a senior researcher at SPC Group and Paris Croissant Innovation Lab Cake Development Office, and became known as the youngest person to pass the Korean master baker exam at the time. Heo Yoon has received the Minister of Agriculture, Food and Rural Affairs Award at a bakery competition. Based on the expertise of these two pastry chefs, Yoonsoop pursues both menu excellence and operational stability, currently operating three stores in Korea.
The brand also gained attention as the first in Korea to develop the "Dacquoise Sando," creating a new dessert category. This menu item, with its distinctive structure and texture, has become Yoonsoop's signature menu.
Brad Factory opened its first store in Hanoi, Vietnam in August 2019 and has since expanded to five offline stores, showing rapid growth. Each store reportedly attracts about 1,400 visitors per day on average. With its own HACCP-certified factory, Brad Factory supplies bakery products to local GS25 convenience stores, establishing a stable operation structure from manufacturing to distribution and expanding its presence in the Vietnamese bakery market. Based on these achievements, Brad Factory was selected as one of the "Top 50 Influential Brands in Vietnam" in April last year and one of the "Top 10 Influential Companies in Asia" in October of the same year.
Brad Factory CEO Kim Sanghyun stated, "The Dubai Chewy Cookie, which we learned from CEO Kim Yonghoon, is a meaningful example of bringing Korean dessert trends to Hanoi, Vietnam. We look forward to strengthening our partnership with Yoonsoop through ongoing technology exchanges as a result of this agreement."
In response, Yoonsoop CEO Kim Yonghoon said, "The bakery market needs to respond sensitively to changes in overseas trends. Through technology exchanges, we plan to directly experience the trends of each market and leverage them to enhance our brand's competitiveness." Yoonsoop plans to conduct local technology training in Vietnam in the first half of the year, followed by additional exchanges in the second half.
