Jeonnam Onion Juice with Reduced Bitterness Launched Jeollanamdo Agricultural Research and Extension Services has newly developed a 'Functional Label Onion Juice.' Provided by Jeonnam Province

Jeollanamdo Agricultural Research and Extension Services announced that it has newly developed a 'Functional Label Onion Juice' that combines both taste and functionality, and will officially launch the product on the 26th.


Onions are a representative functional vegetable, rich in flavonoid compounds and sulfur-containing compounds that provide a variety of physiological activities, including antioxidant effects, prevention of cardiovascular diseases, lowering of blood sugar, and anti-inflammatory effects.


However, due to the unique pungent taste and aroma generated during processing, there have been limitations in product diversification. Currently, over 90% of onion juice products distributed in the market are sold in a single form, leading to a gradual decline in consumer demand.


In response, Jeollanamdo Agricultural Research and Extension Services developed a technology to enhance consumer preference by effectively reducing the bitterness, completing a new onion juice manufacturing technique, and is introducing a functional onion juice product based on this innovation.


The new product balances flavor by blending herbal ingredients that help improve blood circulation, while also softening the strong taste characteristic of onions. Notably, the product has completed all procedures for self-regulatory review regarding the labeling and advertising of functional foods, making it significant in that functional claims can be displayed on the packaging.


This technology has been transferred to Okban Food Agricultural Corporation, a specialized onion juice producer in Muan, and will be available for purchase by consumers through the corporation's official website and Naver Smart Store starting on the 26th.


Kim Haengran, Director of Jeollanamdo Agricultural Research and Extension Services, stated, "The development of this functional onion juice is an important example of increasing the added value of local agricultural products," adding, "We hope this will provide tangible benefits to both onion farmers and processing companies by increasing their income."
