The Shilla Hotel, Pioneer of Mango Bingsu, Launches 60,000-Won Truffle Ice Cream

Introducing a New Summer Menu Inspired by the Popular "Truffle Cake"
Limited Edition Available at The Shilla Seoul Until August

The Shilla Hotel is introducing new summer desserts. On May 2, The Shilla Seoul announced the launch of a truffle-based dessert, "Treasured Moment, Truffle Ice Cream," at its first-floor lounge and bar, The Library.

The Shilla Seoul decided to launch "Truffle Ice Cream" as a summer menu item, inspired by the increasing demand for truffle desserts, including the popularity of the truffle cake "The Taste of Luxury," which was introduced as a holiday cake last year. The Taste of Luxury, released during last year's Christmas season, drew attention for its price of 400,000 won. The newly launched Truffle Ice Cream is priced at 60,000 won.


Truffle Ice Cream is made with black truffle ice cream, inspired by truffles that grow underground. This dessert is themed around the "black truffle," known as a treasure of the earth, and faithfully recreates the appearance and texture of black truffles. The soil of the forest is represented by cookie crumble, and the green grass is recreated with herbs, visually expressing the underground truffle environment.


Special attention was paid to the flavor as well. When the hard chocolate shell is broken, a rich truffle aroma is released. Inside, the ice cream is made with "Gimpogeum Rice," known for its glossy and chewy texture, and infused with black truffle for a deep flavor. The dessert also features jelly made from Ch?teau d'Yquem, a French dessert wine known as "liquid gold," allowing guests to enjoy both sweetness and the aroma of aged fruit at the same time.


Only rice polished on the same day at The Shilla Seoul is used for Gimpogeum Rice. The truffles are stored with the rice to infuse it with a subtle truffle aroma. Additionally, staff freshly shave truffle over the ice cream at the table, enhancing the original flavor and aroma of the truffle.


Other menu items to enjoy alongside the dessert include the dessert wine "Ch?teau Suduiraut Lions de Suduiraut" and the French brandy "Janneau XO Armagnac." Ch?teau Suduiraut Lions de Suduiraut features bright acidity, abundant sweetness, and elegant balance, harmonizing well with the nutty flavor of the rice. Janneau XO Armagnac, with its velvety smooth yet intense taste, adds depth to the savory truffle and the smoothness of the rice ice cream, making it an excellent pairing with the Truffle Ice Cream.


Truffle Ice Cream will be available in limited quantities per day until August 31 at The Library, the lounge and bar at The Shilla Seoul, as well as at the luxury whisky boutique and lounge, The Distillers Library.


Meanwhile, starting May 2, The Shilla Seoul will also be selling Apple Mango Bingsu. The price has been raised by 7.8% from last year's 102,000 won to 110,000 won.
